Spring Plum & Tomato Bruschetta
Any plum in season is great
or a medium size bunch
Extra Virgin Olive Oil
Baguette or Italian Bread
whole wheat or your favorite bread (whole grain or gluten-free)
Rinse and Wash fresh ingredients.
Dice the plum tomatoes and plums. Set tomatoes and plums aside in a bowl.
Finely mince garlic cloves. Set aside.
Roughly chop fresh basil leaves. Set Aside
Add garlic, basil, extra virgin olive oil, and balsamic vinegar to the tomato plum bowl.
Gently Mix and let it marinate for 10 minutes.
Slice and toast your bread
Top toast with the tomatoes plum mixture
