Spring Plum & Tomato Bruschetta

Today, I want to share my go-to appetizer/ h’orderves- Tomato Plum Bruschetta. I became obsessed with bruschetta after spending a summer in Tuscany. My fondest memories of Italia revolve around food, especially around the zesty fresh vegetables served during Aperitivo! Aperitivo is the super chic and delicious Italian version of our Happy Hour. In Italy, friends and family get together after work to enjoy a glass of red wine and eat delicious and fresh appetizers. To be honest, that is the only way I enjoy a glass of wine or any alcoholic drink- paired with wholesome and scrumptious food. Pairing an alcoholic drink with healthy fats (cashews, avocados, hummus) and fiber rich vegetables will help slow down absorption of alcohol and prevent your stomach from being upset by the carbonation/acidity of the alcohol. Just one more reason to love the Aperitivo…Wine+ Wholesome Food!
On a sunny spring day, I was inspired to create this recipe after walking through the Tompkins Square Park Farmers Market in the East Village. Beautiful plums and tomatoes were in full harvest, so I decided to marry them together in honor of The Tuscan Apertivo! Hope you enjoying whipping up this quick and zesty Aperitivo for your next happy hour or any hour!

- 5 Plum Tomatoes
- 2 Plums Any plum in season is great
- 2 Garlic Cloves
- 1/2 cup Fresh Basil or a medium size bunch
- 1 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Balsamic Vinegar
- 1 loaf Baguette or Italian Bread whole wheat or your favorite bread (whole grain or gluten-free)

- Rinse and Wash fresh ingredients.
- Dice the plum tomatoes and plums. Set tomatoes and plums aside in a bowl.
- Finely mince garlic cloves. Set aside.
- Roughly chop fresh basil leaves. Set Aside
- Add garlic, basil, extra virgin olive oil, and balsamic vinegar to the tomato plum bowl.
- Gently Mix and let it marinate for 10 minutes.
- Slice and toast your bread
- Top toast with the tomatoes plum mixture
